Fiesta Beef & Cheese Corn Casserole

This recipe comes from Caleb’s wife Merileigh. They live at the Wellborn 2R headquarters and feed three hungry teenagers. You can serve this with a salad, some pinto beans and tortillas and call it a fiesta feast.

Ingredients

1 pound cooked Wellborn 2R Ground Beef
2 cans cream style corn
1/2 cup vegetable oil
3/4 tsp. garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 eggs
4 oz. can chopped green chiles
1/2 lb. grated cheddar cheese

Instructions

In a large mixing bowl, combine 2 cans cream style corn, green chiles, oil, garlic powder, salt, pepper, cheese & eggs. Then, stir in cooked ground beef. Pour into a greased 13×9 baking dish and bake at 350 degrees for 1 hour.
