Short ribs come from the USDA Prime chuck, or shoulder, of the beef. A boneless short rib is actually the same muscle as a true short rib, however, the meat changes in texture as it moves into the shoulder. This makes Short Ribs the best braising cuts and extremely easy to prepare. Because the meat is so well marbled, a couple of hours of slow cooking results in incredible juicy tenderness and flavor, this cut falls apart on the fork and melts in your mouth.
