Packaging

Individually wrapped & vacuum sealed to preserve freshness and integrity. Steaks are flash frozen before shipping to lock in flavor and will arrive frozen or partially thawed.

Hand Cut

Each steak is hand cut and trimmed by our butcher in the butcher shop on our ranch.

Beef Belly

I made bacon by cutting the beef belly into small pieces and baking it in the oven on low heat (290 degrees) for 1 hour and 20 minutes. I ate all the bacon over two or three days, so about a pound of bacon per day. It was very good and I slept well the following nights. I’ve been eating carnivore for 4 1/2 years, and I made bacon out of pork belly before this. The beef belly is slightly leaner, which I like. I’ll be buying this cut regularly from now on.

Cured for 10 days, wash, overnight refrigerate, smoke to 150F then overnight refrigerate. Beef Bacon slices have the snow-capped mountain look. The right beef to cure for bacon.

Cured and smoked for beef bacon

I've never had beef bacon but have been wanting to try it. Since no restaurants in my area (or anywhere I've been for that matter) serve it, and my local butcher has a hard time getting it, I decided to buy, cure, and smoke my own beef belly. The price was very reasonable and shipping was fast. I cured for 5 days then hit it with smoke for a few hours or so. The result was nothing short of delicious! The quality of the meat is excellent. I'll eventually buy another belly and use it for burnt ends - I hear beef belly burnt ends are off the chart!
