Carne Guisada

This recipe features our stew meat as a great summer time meal. It is super easy and can be done in the crock pot so it doesn't heat up your kitchen.  Serve taco-style with homemade tortillas and fresh toppings.
  • 3 lbs Wellborn 2R stew meat
  • 1 tablespoon oil 
  • 1 medium onion, diced
  • 1 poblano chile pepper, diced (optional)
  • 3 tablespoons tomato sauce or 1 large tomato, diced
  • 1 teaspoon garlic powder or 3 cloves of garlic, minced
  • 2 teaspoon ground cumin
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 cup water or chicken stock
  • Flour tortillas and pan fried potatoes (add fresh jalepeno slices for extra kick), for serving
Directions:
  1. In a large pan, brown the stew meat in oil of choice with onions and green pepper (if using) over high heat.
  2. Add the tomato sauce (or tomato), garlic powder (or fresh garlic), cumin, salt and pepper and stir well.
  3. Sprinkle the flour over the meat and mix well. Add the water (or stock) and mix well so there are no lumps.
  4. Bring to a boil, cover pan and reduce heat to low. Cook for 1 ½ hours, or until meat is tender. You can also transfer to a crockpot at this point and cook on low 4 hours.
  5. Taste and adjust seasonings if necessary.
  6. Serve with homemade flour tortillas, diced pan fried potatoes and fresh toppings such as cilantro, diced tomatoes, shredded lettuce and cheese.
