One 9-11 ounce steak

It is not very commonly known because it is usually sold as part of a Top Sirloin. We wanted to feature it by itself as a strip steak because it’s grain goes a different direction than the rest of the top sirloin and is one of the most tender cuts of an entire beef. 

At 9 to 11 ounces, this is a naturally smaller cut of steak. It is more typically known as a “Picanha” and is very popular in Brazilian steak houses. Cook as you would any steak.
