Picanha is a cut of beef first made popular in Brazil, and later adopted in Portugal. In the United States, the cut is often named top sirloin cap, rump cover, rump cap, or Coulotte.
It is triangular in shape and surrounded by a thick layer of fat called a fat cap. Because it is not an overused muscle, this cut remains beautifully tender and juicy, producing an amazing flavor when cooked.
“It’s the very best part of the top sirloin. It has a characteristic flavor and texture that many Brazilian chefs are looking for. Great cut for beef lovers looking for something different and wanting to add a little international flair. Excellent selection for cooking on a rotisserie or outside on the grill.” Mike Donathan – Wellborn 2R Meat Specialist
