The Inside Skirt Steak is wider and thinner than the Outside Skirt, but also very tender. This cut is typically marinated and seasoned and slow-cooked. Often sliced and served as fajita or taco meat. Suggested to cut 1/4″ to 1/2″ thick against the grain.
